Processing

The specialty of Lomania is mushroom processing. In addition to the distribution of fresh mushrooms, we also offer blanched, pasteurized, and sterilized mushrooms. Our range also includes a wide selection of ready-made gastronomic products.

Lomania is engaged in processing various types of vegetables, with a primary focus on mushrooms. We distribute fresh mushrooms but also offer them in partially processed versions or as ready-to-eat food products. Our product range includes:

• blanched mushrooms,
• pasteurized mushrooms,
• sterilized mushrooms.

Mushroom processing also involves preparing ready-to-eat products that can be heated or used as ingredients in other dishes. These are usually mushrooms that are appropriately chopped, thermally processed, and supplemented with herbs, onions, or sauces. We offer a wide range of ready-to-eat gastronomic products and also produce substrates for mushroom producers in Poland.

Lomania has been engaged in the collection and processing of vegetables and mushrooms since 1990. Among our wide product range, you will find, among others, products that serve as excellent semi-finished goods for preparing gastronomic products and ready-to-eat food products, such as mushroom stuffing or trifolati mushrooms. Regardless of the product that interests you, you can be sure that in our mushroom processing plant, you are dealing with products of the highest quality.

Mushroom Processing Plant Offer

Among the ready-to-eat products offered by our mushroom processing plant, special attention should be paid to:

  • mushroom stuffing – mushrooms with the addition of onions and spices,
  • greek-style mushrooms – in tomato sauce with herbs and spices,
  • pickled mushrooms – in a brine with vinegar, sugar, vegetables, and spices,
  • trifolati mushrooms – sautéed with garlic and parsley,
  • provençale mushrooms – prepared in the French and Italian style with olive oil, herbs, and spices.
Both blanched, sterilized, pasteurized mushrooms and ready-to-eat gastronomic products are made from the highest quality raw material, sourced from Polish producers. This ensures that the mushrooms retain not only their flavor but also their health benefits.

Pasteurization Process of Mushrooms

Pasteurized mushrooms are a product created by subjecting fresh mushrooms to a pasteurization process. This is a preservation method that involves heating the mushrooms to a temperature of 60-85°C, which destroys most of the microorganisms that could cause spoilage. This process helps retain the natural flavor, color, and nutritional value of the mushrooms while extending their shelf life.

Pasteurized mushrooms are widely used in various branches of the food industry. They are primarily used in the gastronomy sector as ingredients in many dishes, such as soups, sauces, salads, and meat dishes. They are also commonly used in the canned food industry for the production of pickles, marinades, and preserves. Due to their long shelf life, they are ideal for storage and use outside the harvest season.
